Malteser Millionaires

Three layers of deliciousness; thick malted milk base, yummy homemade caramel, and a milk chocolate and malteser spread layer, drizzled with more chocolate!
Malteser Millionaires

- For the Malted Milk Layer
- Malted Milk Biscuits (600g)
- Butter (250g)
- For the Caramel Layer
- Butter (150g)
- Condensed Milk (397g - one tin)
- Soft Light Brown Sugar (150g)
- Vanilla Extract (1/2 teaspoon)
- For the Malteser Chocolate Layer and Drizzle
- Milk Chocolate (300g)
- Malteser Spread (200g)
- White Chocolate (100g)
- Maltesers (100g - 200g; I used a 189g large sharing pouch!)
- For the Malted Milk Layer
- Crush the malted milk in to a fine crumb (using either a food processor or a pestle and mortar!). Grease and line a 9"x9" baking tin.
- Melt the butter, then add to the malted milk crumb and mix until fully combined.
- Press down in to the baking tin and refrigerate for 30 minutes.
- For the Caramel Layer
- Gently heat the sugar and butter in a non-stick frying pan, stirring until melted together.
- Add the condensed milk and bring to a rapid boil, stir continuously and do not take off the heat. Add the vanilla extract after 4 minutes, then continue for 1 additional minute.
- Take off the heat and pour the mixture over the shortbread layer. On a flat surface, shake the tin a little to get the caramel to evenly distribute.
- Chill in the fridge until set (approx 30 minutes).
- For the Malteser Chocolate Layer and Drizzle
- Break 200g of the milk chocolate up in to small chunks and melt in a bowl over hot water until smooth (or in the microwave in 20 second bursts!). In a seperate bowl/jug melt the malteser spread in the microwave for 20 seconds to loosen it a little!
- Add the malteser spread to the milk chocolate and mix together until fully combined and then pour on top of the caramel and smooth out. (I find giving the tin a little shake here on a flat surface helps!). Then scatter on your malteser chocolates, gently pressing down to help them stick to the malteser spread and chocolate layer!
- Chill in the fridge for at least an hour.
- Drizzle Time! Melt 100g of milk chocolate and 100g of white chocolate in two seperate bowls/jugs in the microwave in 20 second bursts. Once melted, use a spoon or piping bag to drizzle the chocolate over the top of malteser millionaires!
- Return to the fridge until set, then cut in to portions and enjoy!
- - Store your malteser millionaires in an airtight container in the fridge , where they'll keep for a week (if they can last that long!)
- - For a thinner malted milk later use 400g of malted milk biscuits and 175g of butter.
- - The drizzle on the top of the malteser millionaires is optional, so is the malteser spread! :)
- - If you can't get your hands on the malteser spread that's okay! The spread can be left out and the millionaires will still be nice and malty because of the malted milk layer and scattered maltesers :)
- - If you'd prefer a soft caramel layer, reduce the boil time of caramel mixture to 2 minutes.
